What’s the difference between ‘who’, ‘which’ and ‘that’?

Use ‘who’ and ‘that’ for people and use ‘which’ and ‘that’ for things.
Why is ‘anywhere’ okay but ‘anyplace’ wrong? And in the US, ‘anytime’ is okay.
